Beef with Broccoli in Coconut Aminos

 

INGREDIENTS:

 

  • ½ kilo beef fillet
  • 1 head of broccoli
  • 2 cloves of garlic, minced
  • 1 onion, minced
  • 3 tablespoons of coconut amino
  • ½ tablespoon of light coconut syrup
  • 1 pinch of ground black pepper
  • ½ tablespoon of sesame oil
  • ½ tablespoon of lauric oil (vegetable oil)

PROCEDURE:

 

  • Heat pan, saute garlic and onion in lauric oil until onion turns opaque.
  • Add beef and cook for three minutes. In a separate pan, blanch broccoli florets.
  • Season beef with three tablespoons of amino (add more if desired), ½ tablespoon of coconut syrup for caramelization, a pinch of ground black pepper.
  • Mix in broccoli florets. Turn off the heat, drizzle ½ tablespoon sesame oil.

Coco Sugar Oatmeal Cookies

INGREDIENTS:

 

  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon Saigon cinnamon
  • 1/2 teaspoon freshly ground nutmeg 1 cup butter, softened
  • 3/4 cups coco sugar
  • 2 large egg
  • 1/2 teaspoons vanilla
  • 3 1/2 cups old-fashioned rolled whole oats

PROCEDURE:

 

  • Preheat the oven to 350°F.
  • Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Beat butter, coco sugar, eggs, and vanilla.
  • Combine flour mixture into butter mixture until well blended.
  • Stir in oats.
  • Drop by spoonfuls, about 3 inches apart, onto a cookie sheet lined with parchment paper.
  • Bake at 350°F for 9-11 minutes. 
  • Remove cookie sheet and let stand for a minute or two until cookies are slightly firm, before transferring cookies to wire racks to cool.
